Have you started thinking about your Easter Brunch menu yet? We are heading to Arizona for Easter so my mother-in-law will be doing most of the cooking and prepping but she always lets me contribute when we visit on holidays. Even though we are on vacation my Easter brunch recipes have to be convenient and easy. Sure, we are on vacation but we still have a busy schedule! The crowd we are planning for could be quite large so we have to be prepared and ready to feed everyone. I love Easter Brunch because not only do we get the traditional breakfast items but also some special Springtime treats! One of the items that I will happily be sharing next month are these Springtime Mini Bundt Cakes. Everything is better in mini form in my mind - means you can have a couple right?

Well we have the special treat covered for Easter Brunch and now on to the "eggs and bacon" of Brunch! The best part about Easter Brunch is that it is more of a buffet setting. Set out everything for everyone to enjoy and try. Sometimes keeping up with the crowds can be difficult but I have found the solution. New HOT POCKETS® Snack Bites! Bacon, Egg and Cheese inside a yummy flaky crust. While these are more of a snack they are hearty and keep you full so they really are the perfect addition to an Easter Brunch table.
I love serving the HOT POCKETS® Snack Bites when I know I am going to have a big hungry crowd. They are so simple to heat and serve and they are made with quality ingredients. When I told my mother-in-law about my idea of adding these little treats to our brunch she was really excited to try them. I also told her to pick up the non-breakfast Snack Bites for us to enjoy during the week we invade her house! Great hearty snacking for the whole family.
I think we will add a little dipping station for these bites as well. Thinking of salsa, cheese sauce, ketchup, and green chili - yum! Another way to save time! We all need to find ways to enjoy our guests during get-togethers and time saving tips like these will help! I cannot wait to start setting up up the Easter Brunch Buffet!
Are you ready to bake some love for your family this spring? I know that my family will love these fun springtime cakes! Being a busy mother is hard, like you all, I want to provide my family with the best and frankly sometimes finding convenient time savers is a life and party saver!
