With school being back in session, our lazy summer schedule is long gone. Over the last couple of months we have been working really hard to eat at home more because we had been eating out so often. We have started meal planning every weekend which gives us the motivation to stick to eating and preparing all our meals at home. Not only is this saving us money, but we are able to make sure the whole family is enjoying a wholesome dinner. Love that.
As we continue to build our menu it is always nice to find new family favorites to add to our rotation, but I have two stipulations to adding a meal to our rotation - easy to prepare and kid approved! Like I said, our school schedule is back which means dinner often feels rushed between dance, swimming and Taekwondo, not to mention taking baths and doing homework. So when I can find a wholesome meal that I can prepare and have on the table in 30 minutes or less, I am hooked.
One way that I can ensure that our meals are prepared and ready to eat in less than 30 minutes is by stopping by Safeway and picking up Smithfield® Marinated Fresh Pork. To accompany our favorite Sweet Teriyaki Pork Tenderloin, I decided to try a fresh and healthy side dish that turned out to be a hit with both kids. Just like our main dish, we need our side dishes to be super easy and kid friendly and this yummy Cilantro Lime Coleslaw was both of those.
Cilantro Lime Coleslaw

8 ounces of prepacked coleslaw mix - ours includes green cabbage, carrots, purple cabbage
1/2 cup chopped cilantro
1/2 cup chopped green onion
2 tbsp olive oil
fresh lime juice from 2 limes
2 tsp sugar
salt and pepper to taste
1. Chop green onions and slice limes in half.
2. In a medium mixing bowl combine coleslaw mix, green onions and cilantro. Toss together.
3. In a small mixing bowl add lime juice, olive oil, sugar, and salt and pepper. Whisk together well.
4. Pour dressing over coleslaw mixture, stir well and cover bowl with plastic wrap.
5. Place in refrigerator for at least 15 minutes before serving. Enjoy!
We are year round grillers, yes even in the Colorado snow, which is why I love these pork cuts. They can all be either grilled, roasted or sautéed which gives us some great options when our meal plan says Smithfield Pork! While preparing our Coleslaw, I had Jeremy put the tenderloin on the grill and by the time the pork was cooked through and ready our coleslaw was nice and chilled and ready. Easy!
Once the pork is grilled to perfection I simply slice it up and dinner is served. The kids always ask for seconds with Smithfield Marinated Fresh Pork, and I cannot blame them.
