I wish I could say that the moment I walk out of work my mom hat turns on every day but that would be a lie. Being a full time working mom can be hard, especially on those days that the workplace exhausts you. But just because you had a rough or long day at work does not mean you get to go home and forget mom duties. I have to worry about dinner, homework and housework so how does one deal with evenings like this? I pull out the mom tricks; especially in the dinner department.
This year we made it a goal to eat at home more than eating out and so far we are doing really well. We are saving money, finding new recipes and enjoying dinnertime conversations at OUR table with the kids. I am super proud of us but won't lie, there are evenings that I want to forget the meal plan and run to the nearest fast food joint but we are sticking to it!
To combat those evenings I make sure we have plenty of convenient options on hand like Michael Angelo's™ Signature Line meals found in the freezer aisle. Michael Angelo's is a family-owned and -operated company that makes the best-tasting prepared meals in the freezer aisle. Michael Angelo and his mom Sara are extremely proud of their meals, using only real ingredients you can recognize and understand when you read the ingredient label - real ingredients, no preservatives and nothing artificial. These meals are perfect for those evenings that mom and dad deserve a night off from cooking.
Michael Angelo's Italian Meals:
- Michael Angelo's Eggplant Parmesan
- Michael Angelo's Shrimp Scampi
- Michael Angelo's Lasagna with Meat Sauce
The Lasagna with Meat Sauce is a favorite with the kids but we all also enjoy the Eggplant Parmesan. The Eggplant Parmesan is made with fresh eggplant, that is lightly breaded, topped with Mom's tomato sauce that is made from hand selected, vine-ripened tomatoes and then topped with Mozzarella. Then sprinkled with a blend of Parmigiano Reggiano & Pecorino Romano. Oh so much goodness!!!
To complete our meal we whip up a nice fresh salad and throw some garlic bread in the oven. Dinner is served! While we love that we can feel good about serving this dinner to our kiddos with quality ingredients I also enjoy the lunch leftovers! Bonus!!
Like I mentioned before, I really love that our goal has been to enjoy our family dinners at home this year. It has given us more time as a family to sit and enjoy one another. As the kids get older I want to continue this family dinner routine but I also want to enjoy our conversations. As parents we all love that one word that is always used by kids when we ask how their day was - GOOD. I decided to start looking for some great family dinner conversation starters to use.
