2 Ingredient Lemon Cake {Light}

I love baking.  I love when fresh baked desserts make my house smell amazing.  I love mixing the ingredients and I love getting creative in the kitchen.  But one thing I do not enjoy - spending HOURS in the kitchen.  All of my recipes must be fast, easy and kid friendly.  

Over the last couple years I have tried a few 2 or 3 ingredient desserts and I really like them because it is easy to throw together on last notice.  As spring comes around it is important to find some desserts that scream spring!!  Enter the flavor of lemon!  YUM!!

Ingredients:

1 boxed Angel Food Cake Mix
22 ounces lemon pie filling
Powdered sugar - optional

Directions:

1.  Preheat oven to 350 degrees and spray 9x13 pan with cooking spray. 

2.  Combine angel food cake mix and lemon pie filling in a medium mixing bowl.

3.  Using a spatula, carefully mix ingredients - just until they are mixed.  DO NOT over mix batter.

4.  Pour batter into prepared pan. 

5.  Bake for 22-25 minutes.

6.  Let cake cool completely before cutting and serving.   

7.  Optional - sprinkle powdered sugar on lemon cake.  Enjoy!!


When I first started doing this recipe I thought these would turn into lemon bars but with using the Angel Food Cake Mix this was more like a sheet cake.  It was fluffy and moist.  So good!  My kids said it was a like a lemon brownie.  YUM!  

No matter what you call this, they are great and super easy to make.

  1. This two ingredient Lemon cake looks so delicious and I want to try it and make it for the kids. I have made two ingredient peanut butter fudge and Coconut bites.

  2. My husband is ALL about lemon-infused desserts. I, on the other hand, love the fact that this only consists of 2 ingredients. With a newborn, baking can be sort of a challenge but this recipe totally seems realistic for me.

  3. Wow, that really does look easy. I would have never thought to use and angel food cake like this but I bet it is delicious. Everyone in my home loves lemon, so I bet it would go over well.

  4. I love to try new and easy recipes. It doesn't get much easier than this, and it sounds so good. I'll have to try it for our next camping trip. We make a lot of fun desserts while camping.

  5. That looks so good! I love the taste of lemon in fluffy cakes and even in other pastries because it's a little bit of tart, sweet and just refreshing overall. This recipe is for keeps!

  6. A baked good cannot get any easier than this! Wow! I'm impressed!! I never was a fan of lemon but my taste buds have changed over the last few years and now it's my go-to for baked goods.

  7. I love finding ways to upgrade a box of cake mix, especially when they're super simple. You can't get much easier than two ingredients! Even I couldn't mess that up. The lemon cake looks so refreshing and delicious, I will definitely try this!

  8. I love spending time in the kitche, too. While I don't mind being in there for hours at a time, if that is the case I must come out of there with multiple dishes in order for it to be worth it! Simple recipes iwth only a couple ingredients are my best friend, though! I've tried a similar recipe with canned pineapple, but never would have thought to do lemon pie filling. My husband will love this!

  9. I love lemon anything and this looks absolutely delicious! I'll make these next time I have friends by for coffee, they seem like the perfect light breakfast that would be a huge hit. I love the idea of using powdered sugar to make them more dessert like as well! I beg my kids would love them that way.

  12. I've never tried a two ingredient dish before, but it seems simple enough that's for sure. In my head I'd like to be a great baker and definitely love my fair share of sweets. This recipe may give me the confidence to give it a go.
